Peranzana Monovarietal Extra Virgin Olive Oil

Un olio armonioso, dal fruttato delicato, ottenuto da una cultivar di origine francese; infatti, il termine Peranzana potrebbe derivare da Provençal, l’area in cui questa varietà veniva coltivata, dando vita a un olio prezioso. Fu l’olio prediletto dall’eclettico Principe di Sansevero, Raimondo di Sangro, tra i primi esponenti dell’Illuminismo europeo, al quale si deve l’introduzione di questa pregiata cultivar in Puglia nel XVIII secolo.

With shades ranging from iridescent blue to lavender, with golden brushstrokes: the Peranzana label is inspired by the colors and scents of French Provence and the clear skies of Puglia.

Organoleptic profile

It enhances the flavor of dishes without overpowering or masking them. Ideal with: mixed salads, both with crunchy vegetables and aromatic herbs (arugula, basil, parsley); tomato or cucumber salads (raw); pasta with tomato sauce (raw); mushroom risotto (raw); raw fish dishes (such as ceviche, tuna tartare, sea bass or sea bream carpaccio), fish or shrimp carpaccio (raw); on grilled vegetables such as eggplant, zucchini, peppers, or asparagus; sauces such as mayonnaise.

Food pairing

Delicately fruity with notes of freshly cut grass, tomato leaves, and artichoke. Balanced bitterness and spiciness, with a slight intensity.

What is a multivarietal oil?

A multivarietal oil (or “blend”) is obtained by pressing together several olive cultivars, selected for their complementary characteristics: in our case we include varieties such as Olivastro, Cima di Mola, Leccino, Coratina, Picholine, Simona and Nociara.

This approach allows for a more complex and balanced aromatic profile—light fruitiness, with notes of fresh grass and artichoke—and greater consistency of quality in each production.

How is extra virgin olive oil best preserved?

To preserve the organoleptic qualities of our extra virgin olive oil as much as possible, it is important to store it in a cool place (ideally between 14-20°C), away from direct light, away from heat sources, and in a closed container (dark glass or tin) to avoid oxidation and degradation.

Daily use requires that, once opened, the oil be consumed within a reasonable time: the aroma and flavor will be at their best if prolonged exposure to air is avoided, and the oil should be kept in the cellar or pantry rather than on hot shelves or in sunlight.

Why do our bottles have such a unique design?

The design of Frantoio D'Orazio's packaging stems from the desire to combine aesthetics and territorial identity: our lines (such as the "Mediterranea Collection," "Opera Collection," and "Aqua Collection") use motifs inspired by Apulian majolica, Mediterranean art, the sea, and even artists' works, transforming the bottle into a design object as well as a container for the oil.

This aims to enhance Puglia's visual heritage, differentiate the product on the shelf, and make the oil a great gift or collectible, where form and content complement each other.

When will I receive my order?

For orders within Italy, deliveries normally take place within 7 working days of order confirmation.

For shipments to other European destinations, the indicated time is up to 15 working days .
