An oil with a bold character and complex personality, made from the Cima di Melfi cultivar—a variety native to the Vulture area and introduced to Puglia over 50 years ago—which today stands as a unique presence in the world of extra virgin olive oils. The limited distribution of this cultivar and the challenges in its processing make it a treasure sought after by enthusiasts of premium oils.

Organoleptic profile

Medium intense green fruitiness with hints of green grass, almond, oregano, artichoke and leafy green. On the palate, medium intense bitterness and pungency in balance.

Food pairing

A valuable ally in the kitchen, ideal for enriching and intensifying the flavors of any dish. To best release its aromatic notes, it is recommended to use it strictly raw.

It is the perfect accompaniment for leavened products such as bruschetta and friselle, or to enrich a simple plate of pasta with tomato sauce. It also magnificently enhances rustic recipes based on turnip greens, cabbage, or broccoli, and pairs perfectly with warm legume soups.

Excellent for enhancing side dishes, from artichokes to asparagus to grilled vegetables, it also adds a touch of character to grilled meats, both white and and red. It also enhances fresh dishes such as pasta salads and the excellence of buffalo mozzarella. Finally, for those who love bold contrasts, it proves to be a true and unexpected gourmet surprise when paired with crumbled cocoa biscuits.

What is a multivarietal oil?

A multi-varietal oil (or "blend") is obtained by pressing together several olive cultivars, selected for their complementary characteristics: in our case, we include varieties such as Olivastro, Cima di Mola, Leccino, Coratina, Picholine, Simona, and Nociara.

This approach allows for a more complex and balanced aromatic profile – a light fruitiness, with notes of fresh grass and artichoke – and greater quality consistency in each production.

How do you best store extra virgin olive oil?

To best preserve the organoleptic qualities of our extra virgin olive oil, it is important to store it in a cool place (ideally between 14-20 °C), away from direct light, heat sources, and in a closed container (dark glass or tin) to prevent oxidation and degradation.

Daily use requires that, once opened, the oil be consumed within a reasonable time: the aroma and flavor will be at their best if prolonged exposure to air is avoided, and the oil should be kept in a cellar or pantry rather than on warm shelves or in direct sunlight.

Why do our bottles have such a unique design?

Frantoio D'Orazio's packaging design stems from the desire to combine aesthetics and local identity: our collections (such as "Mediterranea Collection", "Opera Collection", "Aqua Collection") use motifs inspired by Apulian majolica, Mediterranean art, the sea, and even works by artists, transforming the bottle into a design object as well as an oil container.

This aims to enhance Puglia's visual heritage, differentiate the product on the shelf, and make the oil also a gift or collector's item, where form and content mutually support each other.

When will I receive my order?

For orders within Italy, deliveries are normally made within 7 business days of order confirmation.

For shipments to other European destinations, the indicated time is up to 15 business days.
