The spontaneous olive tree’s fossil traces are millions of years old, long before the appearance of the human being. Several legends speak about it, such as the following:
"According to the decision of Zeus, the Godness who will bring the most useful present will earn Athen and the Attica’s region. Finally, only Athena and Poseidon remain in competition. Poseidon brings a marvellous horse from the forest and Athena creates a new tree from the bowels of the earth: the olive tree. Zeus considers victorious his daughter, supporting that the horse is war whereas the olive tree is peace. "
The Babylonian code regulated the olive oil’s commerce. Egyptian considered it as a present of the Godness, the Jews used it to oil the king, the Phoenicians and the Greeks built their ships to transport amphorae containing olive oil. It seems that in Italy the olive tree’s culture was introduced by the Greeks who considered it as a present of Athena.
The Romans were specialized in stock and in distribution of olive oil, succeeding to exploit the great quantities obtained from the submissive people.
The always green olive tree’s plant, with its typical elliptic leafs, belongs to the “Oleaceae” kind.
It is an European species and this designation means that the native soil of the plant is the coast of the Mediterranean Basin, with an important reference to Antique Greece and Rome. The “sativa” is a well spread olive tree’s species in the Mediterranean landscape.
The plant is the symbol of the Mediterranean environment because it adapts perfectly to the moderate climate and to the calcareous soils, proper to the rocky areas, rich of permeable and productive soils.
